I think we all agree that pumpkin is probably the most popular flavor starting autumn off right and continues through the holidays. Pumpkin is in just about everything from savories to sweets, starting with the traditional pumpkin pie, my favorite chocolate pumpkin cupcakes and this insanely tasty Chipotle Pumpkin Soup!

The chipotle pepper in adobe sauce really gives this soup a nice dose of smokiness that adds some serious flavor. Top it off with with a pinch more of chopped chipotle, cream and toasted pumpkin seeds to garnish and serve it as a starter or as the main meal.

Chipotle Pumpkin Soup

Total Time: 40 minutes

Enjoy this warming Chipotle Pumpkin Soup as a starter or the main dish! Perfect for the cooler months.

Ingredients

For the Soup:

  • 1 Tbsp Olive Oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 - 2 Chipotle Peppers in Adobe Sauce, chopped
  • 1 (15 oz) pureed Pumpkin
  • 1 tsp dried Oregano
  • 1 tsp ground Coriander
  • 1 tsp ground Cumin
  • Salt & Pepper, to taste
  • 3 cups Vegetable or Chicken Broth
  • 1 Tbsp Honey
  • 1 oz Dark Chocolate
  • 1/4 cup Heavy Cream

For the Toasted Pumpkin Seeds:

  • 2 cups raw, seeded Pumpkin Seeds
  • 1 Tbsp Olive Oil
  • 1/4 tsp ground Cumin
  • 1/4 tsp ground Coriander
  • 1/4 tsp Salt
  • 1/4 tsp ground Cayenne Pepper, optional

Instructions

  1. In a large pot, add Olive Oil and heat over medium high heat then add in the Onion, Garlic and Chipotle and saute until Onions are softened, about 5 - 8 minutes.
  2. Add in the Pumpkin, spices, and Broth, Honey and Chocolate, and continue to cook for about 10 - 15 minutes and until Chocolate is melted.
  3. Remove from heat and cool slightly, then add to blender and puree until smooth (alternatively, you can use a stick blender in place of blender).
  4. Once soup is pureed, stir in the Heavy Cream and season with Salt and Pepper to taste.

For the Toasted Pumpkin Seeds:

  1. Preheat oven to 350°F.
  2. In a bowl, add the raw Pumpkin Seeds, Olive Oil and spices, mix well to coat seeds.
  3. Spread out on a baking pan in an even layer.
  4. Toast in preheated oven for about 15 - 20 minutes.
  5. Allow to cool. Can be kept in an airtight container for up to a week.

To Serve:

  1. Serve with a teaspoon of cream, use a toothpick or knife to gently "marble", add a pinch of chopped chipotle peppers in adobe sauce and scatter over the toasted pumpkin seeds.
