Well, you didn’t think I could just stare at that watermelon without making some of this Watermelon Sorbet did you?

Oh so watermelony in every way!

The color looks so stunning, the taste is spot on and it is so refreshingly cool!

My kids, really really REALLY enjoy this watermelon sorbet and what’s so funny about it is that, as much as they really really REALLY enjoy eating a nice cold slice of watermelon, they were shocked at themselves because they liked this sorbet even more. Now, when I buy a watermelon, they want a nibble of the melon and then they ask plead with me to make the sorbet with the rest. Done!

If you want to take the extra time, you can sieve the watermelon mixture before freezing, but personally I find that the seedless variety works well enough and I will skip straight to the freezing stage. I do suggest that you add on extra freezing time in your freezer so that it will be a firmer sorbet instead of a slushy sorbet.

My sorbet “workflow”: When I’m making it, I try to make it after dinner or the day before I’m serving it. This is so that I can freeze it overnight and have it ready for the next day. I try to time it after the kids are asleep so that I don’t tempt them and have to make them wait. (a.k.a. They don’t continually ask if it’s ready!) 😉

Watermelon Sorbet

Yield: 1 1/2 - 2 qts
Prep Time: 15 minutes
Cook Time: 5 minutes
Total Time: 20 minutes

Ingredients

  • 1/2 cup Water
  • 1/2 cup Sugar
  • 6 cups seedless Watermelon, fruit scooped out and roughly chopped
  • Juice of 2 Limes

Instructions

  1. In a saucepan, bring the Water and Sugar to a gentle boil, cooking until the Sugar has dissolved, making a simple syrup. Allow to cool.
  2. In a blender or food processor, remove any black seeds and add the chunks of Watermelon along with the cooled Simple Syrup and Lime Juice and blend into a puree. Chill mixture in the refrigerator for at least 30 mins - 1 hr or until ready to freeze.
  3. Add the pureed Watermelon to the ice cream maker and freeze according to directions. Transfer the Sorbet to a freezer proof container or use half of a scooped out watermelon and continue to freeze in freezer for an additional 2 - 4 hours or until firm.
  4. Serve and enjoy.

    1. Hi Donna! If you wanted to forego the sugar, you could either substitute it with honey or other sweetener. Another option would be to freeze the watermelon chunks first, for several hours, then put it in a food processor or blender with the lime juice and puree it. Let me know if you try it 🙂
