Prepare the Batter: In a shallow bowl, whisk together eggs, milk (or cream), sugar, vanilla, cinnamon, orange zest, and salt until smooth.
Slice & Soak the Croissants: Slice croissants in half horizontally. Dip each half into the egg mixture for 15–20 seconds per side, making sure they’re coated but not soggy.
Cook the French Toast: Heat a large skillet or griddle over medium heat. Melt 1 tbsp butter, then place croissants cut side down. Cook 2–3 minutes per side until golden and crisp. Add more butter for the remaining croissants.
Assemble & Garnish: Place two croissant halves on each plate. Top with maple syrup, whipped cream or crème fraîche, extra orange zest, and berries if using.
