Easy to make and absolutely delicious Buckeye's - the perfect combination of Peanut Butter and Dark Chocolate!

Ingredients
  

  • 1 cup Peanut Butter creamy or crunchy
  • ΒΌ cup 4 Tbls Unsalted Butter, melted
  • 2 cups plus extra for rolling Confectioners Sugar (Icing Sugar), sifted
  • 6 - 8 oz Dark Chocolate chips or bar melted

Method
 

  1. In large bowl, combine Peanut Butter and melted Butter together.
  2. Sift in Confectioner's Sugar 1/2 cup at a time until well mixed.
  3. Scoop dough, 1 Tablespoon at a time and roll into ball. If dough is too stick, powder your hands with the extra Confectioners Sugar and continue to roll into 1 inch balls until dough is used up, placing them on a parchment lined baking sheet as you.
  4. Freeze Peanut Butter balls for 10 - 30 minutes.
  5. In microwave, melt chocolate in a microwave proof bowl 30 seconds at a time. stirring each time until the chocolate has melted and appears glossy. About 2 minutes total.
  6. Remove Peanut Butter balls from freezer and carefully using a fork or candy dipper tool, dip each ball into melted chocolate. Place each ball on parchment lined baking sheet and refrigerate for 30 min - 2 hours or until firm and serve.
Note: Don't forget that if the peanut butter dough is too sticky to work with, dust your hands with the Confectioner's Sugar and continue rolling. Also keeping the dough and your hands cold will prevent the dough from sticking as well.
