Chicken Feta Salad with Blackberry Balsamic Viniagrette

A gorgeous Blackberry Balsamic Vinaigrette drizzled over the Chicken Feta Salad is perfect for lunch or a light dinner.

Ingredients
  

For the Blackberry Balsamic Vinaigrette:

  • ¾ cup Olive Oil
  • 2 Tbls Balsamic Vinegar
  • ¾ - 1 cup fresh Blackberries
  • 2 Tbls Honey
  • ½ tsp Salt
  • ½ tsp Pepper

For the Salad:

  • 2 cups loosely packed Baby Spring Mix Lettuce
  • 2 Chicken breast grilled or pan seared then cut into bite size pieces (can also use a cooked Rotisserie Chicken from the deli)
  • 1 - 2 Spring Onions diced
  • ¼ cup Walnuts toasted
  • ½ cup fresh Blackberries
  • Salt and Pepper to taste

Instructions
 

For the Vinaigrette:

  • Using a food processor, blender or blender stick, puree the all the ingredients for the Vinaigrette until smooth and slightly a thick dressing consistency. Keep refrigerated until ready to use.

To Assemble Salad:

  • Toast the nuts in a dry pan for 2 - 3 minutes or until just starting to smell fragrant.
  • In your serving bowl, start with adding the Baby Spring Mix Lettuce the top it off with your cooked, chopped Chicken, Spring Onions, Blackberries, toasted Walnuts and Feta cheese.
  • Drizzle the Blackberry Balsamic Vinaigrette, toss and serve.

    Feel free to fix up your salads with your favorite goodies, raspberries and other fruits alone or mixed, with or without the chicken, your favorite toasted nuts, feta or goats cheese, your favorite lettuce blend.Vinaigrette can also be used to marinate chicken before grilling, pan searing or baking or rub it over a whole chicken then roast.
