Instructions
In a medium bowl, whisk together honey, balsamic vinegar, Earl Grey Tea concentrate. Set aside.
In a large cast iron or non-stick skillet over medium-high heat, add the olive oil. Once the oil is hot, add the salmon skin-side up. Season with salt and pepper, to taste. Cook the salmon until it has a nice color and is a deep golden brown, about 3 - 4 minutes (depending on thickness). Flip over the salmon carefully.
Now add in the minced garlic, cooking for about 30 seconds (don't let it burn). Next add the balsamic and Earl Grey mixture, and cook until sauce is reduced by about one-third, occasionally baste the salmon with the sauce to allow it to glaze, cooking about 3 minutes.
Garnish with diced spring onions and lemon slices if desired.

Notes
To make the Earl Grey tea concentrate, use 2 Stash Earl Grey teabags, brewed in 1/4 cup of freshly hot boiled water. Leave to brew for about 5 - 10 minutes. While it's still warm, you can add in the honey for the glaze during this time if you prefer, as I do, and continue with directions above.This recipe is perfect to scale up the amount of servings needed for entertaining, simply double the glaze ingredients which can be used for serving up 10 - 12 guests. Just add the amount of salmon fillets needed, 1 (6 oz) salmon fillet for each person.
