Instructions
In a saucepan, bring the Water and Sugar to a gentle boil, cooking until the Sugar has dissolved, making a simple syrup. Allow to cool.
In a blender or food processor, remove any black seeds and add the chunks of Watermelon along with the cooled Simple Syrup and Lime Juice and blend into a puree. Chill mixture in the refrigerator for at least 30 mins - 1 hr or until ready to freeze.
Add the pureed Watermelon to the ice cream maker and freeze according to directions. Transfer the Sorbet to a freezer proof container or use half of a scooped out watermelon and continue to freeze in freezer for an additional 2 - 4 hours or until firm.
