Ingredients
  

  • 1 ½ oz rum
  • ¾ oz lime juice freshly squeezed
  • 1 oz simple syrup
  • Mint leaves 6 - 8, plus extra for garnish
  • Angostura bitters a couple of dashes
  • 2 oz Prosecco or Champagne
  • Lime slices or wedges to garnish

Instructions
 

  • In a mixing glass or shaker, muddle the lime juice, syrup, and mint.
  • Add in the rum, bitters, and the ice. Shake.
  • Strain into a (coupe) glass, and top off with the Prosecco or Champagne.
  • Garnish with mint leaves and lime slices, if desired.
