- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Slice each pitted Date lengthwise without cutting all the way through, making a pocket.
- In a bowl, mix together the rest of the ingredients until well combined.
- Stuff each Date with about 1/2 tsp of the filling.
- Place the stuffed Dates on a parchment lined baking sheet, and bake in a preheated 350°F oven for about 2 – 3 minutes. Serve immediately.

Method
- Line an 8 x 8 baking dish with parchment paper and set aside.
- In a food processor, add the Almond Flour and Figs and process until well combined and finely chopped.
- Scrape sides down, add the Dates and continue to process for a few pulses, making sure all is mixed well.
- Add in the Almond (or Peanut) Butter, Orange Zest, Vanilla, Cinnamon, Salt, and Pepper (if using), and pulse several times, scraping down sides if needed, and process until everything is well combined.
- Transfer mixture to a bowl, and fold in the Oatmeal, using your hands to mix thoroughly.
- In a parchment lined baking dish, add the mixture and using the back of a spoon or your hands, firmly press the Date and Fig mixture down evenly. Cover with plastic wrap and place in freezer for at least 30 minutes or overnight.
- Remove from freezer, lift the paper and place the frozen slab on a chopping board, cut into 1 inch squares or 2 inch bars and enjoy.

- Peel the oranges, removing as much of the white pith as possible. Slice in 1/4 inch thick slices, place in a serving dish.
- Slice the dates in half, remove the pit, then slice thinly (julienned). Add to oranges.
- Garnish the salad with pomegranate arils and diced chile pepper., if preferred.
- Mix together the orange juice and honey (or pomegranate molasses), drizzle over salad and toss.

- In a dry skillet, toast the Walnuts until just starting to color, remove from heat to cool. Set aside.
- In a shallow bowl, add the Coconut. Set aside.
- Add the pitted Dates, Cinnamon, Honey and Rosewater (optional) to a food processor and pulse until you have a nice paste.
- Add in the cooled Walnuts, and pulse a couple of times to incorporate into the Dates mixture. Do not over mix.
- Pinch about a cherry size of the mixture and roll into a ball (keep your hands just moist with water to prevent sticking).
- Roll each Date Bite into the shredded Coconut, coating evenly.

Method
- Preheat oven to 350F.
- Place your dates and water in a saucepan and bring to a boil. Once boiling, turn down heat to Low and simmer for 10 minutes.
- Stir in the Baking Soda and Butter, stirring occasionally until butter is melted.
- Take off the heat and cool slightly.
- If the mixture is all ready a chunky puree, then skip next step. If the dates seem to still be “solid” then place mixture in blender or food processor and blend until a chunky puree.
- In medium bowl, sift in your flour and add sugar.
- Next add in the Vanilla extract and the 2 eggs and now the date “puree” mixture.
- Don’t over mix.
- At this point, you can keep the batter, covered in the fridge for up to 2 days until ready to bake.
- In a muffin tin, prepare by placing paper muffin cups in.
- Fill the muffin cups 2/3 full.
- Place in oven for 15-20 minutes, depending on how hot your oven gets. Muffins are ready when knife or cake tester inserted comes out clean.
- Remove from oven and cool on cooling rack.
- Serve plain or with Caramel Sauce.
- Makes 12 medium sized muffins or 24 mini-muffins
