Yes, I’ve been AWOL the last few days … between every one in my family feelin’ a bit poorly and basically life, it’s been one of those moments in life that I’m glad are over. And now, back to what I enjoy 🙂

I love creamy, cold smoothies and this Blueberry Smoothie is rather tasty.

Recently I was able to write about the Florida Blueberry Smoothie, but unable to put it my favorite Ziplist recipe format. If you are unaware of Ziplist, you should give it a try. Many wonderful food blogs have started to use Ziplist which makes life so much easier for you! You can print your recipes with ease and in most cases save your favorite recipes from around the web to your online Ziplist recipe box. From there you can create your own shopping list and even find grocery deals for whats on your list in your area. The best part is that it’s all free for you to use to your heart’s content.

In this recipe I have changed it a bit from the Florida Blueberry Smoothie, I’m big on plain or unsweetened Greek Yogurt and then adding my favorite fruit and a drizzle of honey to it. So this is my ode to my favorite snack, summer style. Smoothies are perfect for cooling down and getting in your healthy dose of fruit.

What I love about this recipe is that you can substitute your favorite berry, adjusting the honey to taste, or make it a mixed berry treat. You can also make it into a frozen ice lolly by using your ice pop molds or ice cube trays, a delicious treat for you or the kids.

Blueberry Smoothie

Cool and refreshing Blueberry Smoothie! Great for a summer cool down or freeze any leftovers for a delicious frozen treat.

Ingredients
  

  • 2 cups Blueberries fresh or frozen
  • 1 cup Milk
  • 2 cups Plain Yogurt I use Dannon, because it's unsweetened - then sweeten to taste
  • 2 Tbls Honey or to taste
  • 1 tsp Vanilla optional
  • Handful of Ice Cubes
  • Mint springs for garnish optional

Instructions
 

  • Clean and rinse blueberries.
  • Blend Ice, Blueberries, half of Milk in blender until smooth.
  • Add in Yogurt, remaining Milk, Honey, Vanilla and Ice and continue to blend until well combined and creamy.
  • Serve immediately.
  • Garnish with mint (optional)

Notes

Can drink straight away or freeze in ice pop molds or ice cube trays for a tasty frozen treat.
