Having a bad day? Little ones have a boo boo? Need a pat on the back? Santa need a snack? COOKIES are usually the remedy and answer. (Now I’m not saying to scarf down the whole batch…oh deary no, that would take away from the “making it special bit” – although rather tempting!)

So if you need a “Home, Home on the Range” warm and comfy-cozy treat, you should try these Cowboy Cookies and feel the benefits of one of the best old fashioned therapies around! 🙂

Great tasting Cowboy Cookies, a yummy treat full of Oatmeal, Pecans and plenty of Chocolate Chips to go around!

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients
  

  • 1 cup Flour
  • ¾ tsp. Baking Powder
  • ¾ tsp. Baking Soda
  • 1 tsp. Cinnamon ground
  • ¼ tsp. Kosher Salt
  • 6 Tbls. Unsalted Butter softened
  • â…“ cup Light Brown Sugar
  • 1 Egg
  • 1 tsp. Vanilla Extract
  • 1 Tbls Milk
  • 1 cup Old Fashioned Rolled Oats
  • 1 cup Chocolate Chips semi-sweet
  • ½ cup Pecans chopped

Instructions
 

  • Preheat oven to 350F and grease or line baking sheet with parchment paper.
  • In large bowl, cream together Butter with Sugars until fluffy.
  • Add Egg, Vanilla and Milk and mix well.
  • Add in Flour, Baking Powder, Baking Soda and Cinnamon and continue to mix until well blended.
  • Fold in Oats, Chocolate and Pecans.
  • Using a Tablespoon or Cookie Scoop, place on prepared cookie sheet 2 inches apart and bake in the middle of oven for 10 - 15 minutes or until light golden on edges (longer if you prefer a crispier cookie).
  • Cool on baking sheet for 2 minutes and then transfer to cooling rack to cool completely.

Makes 24 Cookies

    2. hi, your cowboy cookies were intriguing but confusing. The directions mention blending the butter and sugarS and also omits when to add the baking powder and soda etc. it may need proofing.

      I made the adjustments to the directions and they are delicious! Thanks for sharing.
