- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- In a large pot, add cleaned potatoes, cover with cold water and bring to a boil over medium-high heat. Once the water begins to boil, cook for about 4 – 5 minutes until fork tender. Do not fully cook through so they don’t fall apart during the remaining cooking. Drain and allow to steam dry for a few minutes, then toss potatoes in olive oil to lightly coat and season to taste with salt.
- Cut the bacon strips in half. Wrap each Idaho fingerling potato with a half strip of bacon, arrange bacon-wrapped potatoes in a single layer on a baking sheet. Bake in preheated 425°F oven for 40 – 45 minutes or until bacon is golden and crispy.
- While roasting potatoes, prepare the cheese fondue dip. In a saucepan, heat the unsalted butter with cornstarch over low heat until melted. Whisk in the wine and salt, stirring continually over medium-low heat until just starting to boil, continue to cook, continually stirring for about 1 minute until mixture starts to thicken.
- Turn down the heat to low, add the cheese and thyme and continue to stir just until the cheese is melted. Season to taste. Garnish with crushed red pepper flakes, serve with the bacon-wrapped potatoes.

- In a large mixing bowl, combine the egg, mayonnaise, mustard, lemon juice, hot sauce, and salt and pepper together until mixed well.
- Add the shallots, bell peppers, crab meat, and breadcrumbs to the mayonnaise mixture until combined.
- Form into patties (about 4 – 6 depending on size), at this point you can cover and chill for 1 hour or up to overnight if preferred.
- In a large skillet, heat oil over medium high heat. Sear crab cakes until golden brown, about 3 to 4 minutes on each side. Allow to cool on paper towel lined dish.
- To serve, simply take a radicchio leaf, tuck in some baby greens, and spring onion, top with a warm crab cake and drizzle on some caper remoulade and a squeeze of lemon if desired.

- In a gallon size ziploc bag, pour in the butter milk and add 1 tsp of salt and 1/2 tsp pepper. (Can also add in hot sauce or chili powder if desired). Seal the bag, place in the fridge for at least 4 hours or preferably overnight to marinate. Take out of fridge for at least 15 minutes prior to frying so it can come to room temperature.
- Heat at least 3 inches of oil in a dutch over (or deep fryer) to about 375°F.
- In a ziploc bag or shallow bowl mix together the Flour (Bisquick), Salt & Pepper, Garlic Powder and Smoked Paprika until well blended.
- Place the buttermilk soaked Chicken one piece at a time into Flour mixture and generously coat all over.
- Carefully place all the coated Chicken once at a time into the hot oil and deep fry for 5 – 6 minutes.
- Remove, drain on a paper towel lined plate and let the chicken rest for 5 minutes.
- Add the Chicken back to the hot oil once more this time for 4 – 5 minutes or until golden brown, remove, drain and keep warm in 300°F oven until ready to serve.
- In a bowl, mix together Bisquick/Baking Mix, Egg, Milk, Oil, Salt & Pepper and your favorite shredded cheese. Mix well.
- Heat waffle iron, spray with cooking spray, pour about 1/4 cup or recommended amount of batter for your waffle iron, so that you don’t have a spill over, close cover and cook for about 4 – 5 minutes or until just golden.
- Mix Maple syrup and Balsamic vinegar in small bowl and set aside until ready to use.
- Fold a warm large round waffle in half add 1 chicken breast, lettuce, crispy smoked bacon and generously drizzle Maple Balsamic Vinaigrette and serve with additional Vinaigrette on the side. Can add tomatoes and extra cheese if desired.
