Ingredients

  • ½ cup mayonnaise
  • 2 cloves garlic finely minced or grated
  • 1 tsp lemon juice
  • 1 tsp truffle oil

For the Smash Burgers:
  • lbs ground beef (preferably 80/20 blend)
  • Salt & freshly ground black pepper
  • 4 slices Havarti cheese
  • ¼ cup grated Parmesan cheese
  • 1 large white onion thinly sliced into half moons
  • 4 brioche or potato buns toasted
Optional Topping:
  • Sautéed mushrooms

Method
 

  1. Make the Garlic Aioli: In a small bowl, whisk together mayonnaise, garlic, lemon juice, truffle oil, and a pinch of salt and pepper. Cover and refrigerate until ready to use.
  2. Sauté the Mushrooms (Optional): Heat a little oil in a pan over medium heat. Add sliced mushrooms and sauté for 5–7 minutes, until golden brown and tender. Season with salt and pepper, then set aside.
