I’m good with pizza! I’m even better when I get to eat a non-pepperoni pizza!

My kids wanted pizza for dinner. Always. Pepperoni. No, you can’t go wrong with the most popular pizza rendition ever. But mama wanted her own this time!

Pizza happened.
The kids got to make their own with, yup, pepperoni. It’s great fun to get them involved, flour flying everywhere, pizza dough … everywhere. It all amounts to making some great memories and also one day, turning over kitchen duty to them so I can relax a bit (yup, motives).
I really enjoy making our own pizzas and have found that this recipe for homemade pizza dough is my favorite and works perfect every time. I also use the same pizza dough to make some pretty addictive little Pizza Bombs, you have to try them. Oh my yum!

For pizza night this time, I wanted to indulge in a slightly grown up flavor and made a pizza starting with a layer of fig preserves and creating this Caramelized Onion Brie Pizza.

I. Ate. It. All. Granted it was over two days, but I wasn’t about to share this one with my pepperoni lovin’ kids. 😉
It’s great to get creative with pizza night. Just get several of your favorite toppings, sauces and cheeses to mix up and try. Make the pizzas as big as your oven can handle or let everyone make their own individual pizzas. So fun, and lets everyone get in on the fun.

Caramelized Onion with Brie Pizza
Ingredients
- ½ recipe for Homemade Pizza Dough
- 2 – 3 Tbls Fig Preserves per pizza
- 2 – 3 oz creamy Brie Cheese or to taste
- 1 medium Vidalia sweet Onion, sliced
- 1 Tbls Olive Oil
- Several sprigs fresh Thyme leaves picked
- Black Pepper to taste
Instructions
- Prepare the Homemade Pizza Dough according to directions.
- Preheat Oven to 425°F.
- Roll out on a lightly floured surface until about 1/8 – 1/4 inch thick, allow to rest about a minute. Then place on pizza stone or baking sheet.
- In a large skillet, heat the Olive Oil over medium high heat. Add the sliced Onions and saute for 5 – 8 minutes or until the onions are translucent. Set aside.
- Spread the Fig Preserves over pizza base, leaving a border around the edge. Top with the sauteed Onions, add “pinches” of the creamy Brie cheese all over. Sprinkle on the fresh Thyme leaves and Black Pepper, to taste.
- Bake in the 425°F pre-heated oven for 8 – 10 minutes or until cheese is melted and pizza crust is started to turn golden.
- Garnish with additional fresh Thyme, if desired.

Oh Julie, I so wish I had a fig tree, my friends did years ago and we would mostly eat them straight off the tree and make lots of Fig preserves, a recipe I will post in the near future! 🙂 Happy to inspire!
