Fresh from Florida Strawberry Parfait

Let me start off by saying this …

I am so glad that I live in Florida!

I have so many reasons why I’m happy and thankful, one of which would be the lack of snow laden and bone-chilling weather right about now (that’s because I’m a wimp when it comes to such things). The other reason is the incredible Fresh from Florida produce that is available NOW … in February! Yes that’s right, it’s Strawberry Season in February in the Sunshine State!

There is nothing like the taste of a fresh Strawberry and it’s hard for me to keep my paws off of them.

If you are in the market to whip up a beautiful dessert or salad with strawberries, like the Arugala and Florida Berry Salad with Candied Pecans, look for the produce that says that they are Fresh from Florida. They are most definitely not bland, like those berries tasting of nothing much more than water. These little red jewels are bursting with bright and brilliant flavors and I love them!

You can go to the website Fresh From Florida to be inspired by their beautiful recipes! Below I have shared their recipe for the Florida Strawberry Parfait, and it’s insanely gorgeous tasting and so simple to make.

Craving Strawberries yet? Well I urge you right now to drop everything and run to the closest grocery produce section and grab yourself a few punnets of Fresh from Florida Strawberries! Well … go on then.

It is so good. Think cheesecake! A smooth creamy layer with strawberries and little crunchy bits of crushed graham crackers, makes for a beautifully layered cheesecake in a glass.

Here’s a bit of trivia for you, did you know that during February not only is it Strawberry season in Florida but it’s also home to the world famous Florida Strawberry Festival during February and early March! I know, nice.

Now for the gorgeous recipe pictured above …

Florida Strawberry Parfait

Prep Time: 10 – 15 minutes
Yields: 4 Parfaits

Ingredients:

2 cups fresh Florida strawberries, rinsed, hulled and sliced
8 ounces low fat cream cheese, whipped
2 tablespoons natural Florida sugar
1/2 cup low fat vanilla yogurt
4 graham crackers, crushed
1 lemon, juiced
4 sprigs fresh mint for garnish

Directions:

  1. In medium bowl, mix together whipped cream cheese, sugar and lemon juice until well combined.
  2. Fold yogurt into the cream cheese mixture and mix until smooth and creamy.
  3. In serving dishes, layer the cream cheese mixture and strawberries.
  4. Top each layer with a sprinkle of crushed graham crackers.
  5. Garnish with sprigs of fresh mint if desired. Chill and serve.

This recipe was a hit with my family! They were asking for more as they were licking their spoons clean. I have officially put this recipe on my Family Favs list and we will be enjoying it many times over.
