If you want the slow, spoonable option, start here. Arborio rice cooks with warm stock until creamy, then butter, Parmesan, sautéed mushrooms, lemon, and truffle oil finish the pan.
Truffle and Mushroom Risotto

- Heat olive oil in a skillet over medium heat.
- Add mushrooms, garlic, and thyme. Cook, stirring occasionally, for about 10 minutes, until liquid evaporates and mushrooms begin to brown.
- Season with salt and pepper. Set aside.
- In a large pan, heat olive oil over medium heat. Add onion and cook until softened, about 10 minutes.
- Add garlic and cook for 30–60 seconds.
- Stir in the Arborio rice and cook for 2 minutes, coating each grain with oil.
- Pour in the wine, stirring until absorbed.
- Add warm stock, one ladle at a time, stirring frequently and allowing it to absorb before adding more. Continue for about 20 minutes, until rice is creamy but still al dente.
- Remove from heat. Stir in butter and Parmesan (if using). Season with salt and pepper. Cover and let rest 2 minutes.
- Spoon risotto onto plates.
- Top with sautéed mushrooms (or stir them into the risotto).
- Drizzle with truffle oil and a squeeze of lemon.
- Garnish with parsley and thyme if desired.

- In a large skillet, melt butter and olive oil over medium heat. Sauté garlic for about 30 seconds until fragrant, then add mushrooms. Cook until softened and lightly browned, about 5–6 minutes.
- Lower the heat. Stir in heavy cream, Parmesan, salt, and pepper. Let the sauce simmer gently for 2–3 minutes until slightly thickened.
- Remove from heat and stir in 1 teaspoon of truffle oil. Taste, then add the second teaspoon if you’d like more aroma.
- Mix the drained pasta into the sauce, adding a splash of reserved pasta water as needed for a silky, cohesive texture.
- Divide among plates. Top each serving with additional Parmesan and chopped parsley. Plate immediately and enjoy.
- Mushrooms: Cremini are reliable and flavorful, but wild mushrooms (like shiitake or chestnut) add amazing depth.
- Cream swap: Replace half the heavy cream with mascarpone for extra richness and a silkier texture.
- Truffle choices: White truffle oil offers a delicate aroma; black truffle oil delivers stronger notes—choose based on your preference.

- Bring a large pot of salted water to a boil, then add your pasta and cook according to the package instructions or until al dente. Reserve about ½ cup of pasta water, then drain the pasta and put aside
- In a large skillet, heat olive oil over medium to high heat. Add your mushrooms and sautè for around 5-7 minutes or until golden and tender.
- Add in your minced garlic and cook for about a minute. Season with salt and pepper to taste
- Reduce the heat to medium and add the butter to the skillet with the mushrooms. Once the butter has melted, add in the heavy cream and stir until fully combined.
- Let the mixture simmer for a few minutes, then stir in the truffle oil and parmesan cheese. If you find your sauce is too thick, add some of the pasta water we put aside earlier and mix until you have your desired consistency.
- Top with fresh shaved truffle or chopped fresh parsley if desired.

Baked Mac and Cheese: Truffle Edition

- Preheat the oven to 325 degrees F. Grease or butter a 9 x 13 or 8 x 8 ovenproof bakingdish.
- Cook the macaroni to al dente, according to package instructions. Drain well, set aside. Shred cheeses and set aside.
- Melt the butter in a medium saucepan over low heat, whisk in the flour, continue cookingfor 2 minutes stirring constantly. Slowly pour in the milk, continue whisking to prevent the milk from scalding, and mix until smooth and creamy.
- Remove from heat, add in the shredded cheeses, salt, pepper, truffle oil, and thenutmeg, mixing until the cheese has melted.
- In a large bowl, combine the cooked pasta and cheese sauce, and gently toss to coat. Transfer to a prepared baking dish.
- In a medium bowl, combine the panko, minced garlic, chopped parsley and truffle oil, mixwell. Evenly sprinkle the panko topping over the mac and cheese, and if desired, addsome shredded parmesan as well.
- Bake in a preheated 325°F oven for about 30 – 35 minutes or until bubbly and topping isstarting to turn golden, serve hot.

- Make the Garlic Aioli: In a small bowl, whisk together mayonnaise, garlic, lemon juice, truffle oil, and a pinch of salt and pepper. Cover and refrigerate until ready to use.
- Sauté the Mushrooms (Optional): Heat a little oil in a pan over medium heat. Add sliced mushrooms and sauté for 5–7 minutes, until golden brown and tender. Season with salt and pepper, then set aside.
- Prepare the Burger Patties: Divide the ground beef into 4 equal portions and gently roll them into balls. Avoid overworking the meat to keep the burgers juicy. Season with salt and pepper.
- Cook the Smash Burgers: Heat a large cast-iron skillet or griddle over medium-high heat. Add the meatballs to the skillet and immediately top with a handful of thinly sliced onions. Smash the meatballs flat with a heavy spatula or burger press until thin, pressing the onions into the meat. Cook for 1–2 minutes until the edges are crispy and browned.
- Add Cheese: Flip the patty and sprinkle a generous amount of Parmesan on top. After about 1 minute, add a slice of Havarti and cook for an additional minute, until melted and cooked through.
- Assemble the Burgers: Spread garlic aioli on the bottom buns. Place patties on top, add mushrooms if using, and close with the top bun.
- Serve: Serve hot with fries or a side salad. For extra truffle flavor, drizzle a little more truffle oil on top.

The Best Truffle Fries with Parmesan

- In a small bowl, combine the salt, Litehouse freeze-dried garlic, and parsley. Set aside.
- You can peel the potatoes if desired or leave the peel on (my preference), and cut lengthwise into 1/4 inch slices.
- In a large bowl, fill with cold water and a handful of ice. Place the cut potatoes in the water and soak for about 20 – 30 minutes. Drain and pat dry. The potatoes need to be dried before cooking (especially if you're frying).
- Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
- In a large bowl or gallon-sized plastic bag, toss the cut Idaho potatoes sticks with about 1 – 2 tablespoons of olive oil until lightly coated.
- Spread the Idaho potato sticks on the baking sheet in a single layer and bake in the preheated 425°F oven for about 30 minutes or until starting to get crispy, making sure to turn fries over halfway through baking time.
- If using a deep-fryer, heat deep-fryer to 350°F, or you can add enough vegetable oil to fill a deep saucepan half of the way full and heat over high heat. BE CAREFUL. DO NOT LEAVE HOT OIL UNATTENDED. You can test to see if the oil is hot enough by carefully dropping a small piece of bread into the hot oil, if the oil has reached 350°F, it will start to turn golden in 10 seconds.
- Fry in batches. Carefully add the fries and cook until golden, about 3 – 5 minutes. Using a slotted spoon or spider strainer, remove fries once they are golden and drain on a paper towel-lined plate. *To keep warm, place fries in 250°F oven until ready to serve*.
- While fries are hot, sprinkle with the salt mixture and toss. Lightly drizzle with truffle oil, and garnish with grated Parmesan. Serve hot.

This version starts with hot cream over chopped chocolate and finishes with vanilla, plus orange zest if you want it. Chill, scoop, then roll each truffle in cocoa, nuts, or coconut.
Chocolate Truffles

- In a small saucepan, gently heat the heavy cream until it simmers, take off the heat.
- Pour the hot cream over the chopped chocolate in a large bowl. Add the butter and let it set for a few minutes before stirring. After about a minute, stir until smooth, then mix in the vanilla extract and orange zest (if needed).
- Cover the bowl with plastic wrap and refrigerate for 1-2 hours or until firm. (Can be done up to two days ahead)
- Once chilled, scoop out small portions about a tablespoon full and roll them into balls (running your hands under cold water can help with rolling the truffles!)
- Roll each truffle in cocoa powder, nuts, or coconut as desired.
- Place onto a plate or baking sheet and refrigerate until you're ready to enjoy!

Dark Chocolate Truffles

- In a saucepan over medium low heat, bring the Whipping Cream to a simmer, just until the bubbles start to form. Remove from heat.
- In a separate bowl, add the chopped chocolate and then pour the warmed Whipping Cream over the Chocolate and stir using a rubber spatula until the chocolate has melted and is a smooth consistency.
- Add in the Vanilla and mix well.
- In an 8 x 8 pan, pour the Chocolate mixture (now Ganache) in, spreading evenly. Cover with a plastic wrap and place in the refrigerator for 1 – 2 hours until the chocolate is firm enough to scoop and holds it’s shape.
- Once the Ganache is ready, use a melon baller or 1 inch cookie scoop, and scoop out about a 1 inch size ball. Working quickly, roll the ball around in your hands and then place on a parchment lined cookie sheet. Repeat with remaining Ganache, then return to the refrigerator and chill covered with plastic wrap for about 30 – 45 minutes to firm them up again.
- Place a couple of shallow plates or pie pans out, one with the Cocoa Powder and the other with the finely chopped Nuts.
- Roll each truffle ball in your preferred coatings and set aside until ready to enjoy.
