Raspberries with Almond Cream Pastries
This is more of a recipe hack, shortcut, easy and quick to prepare kind of dessert. I love berries and I adore raspberries! They are so tasty and have just the right amount of burst of tart and sweet flavors all at one time. Raspberries are also known to pair well with almonds. Add in some freshly whipped cream and wowza, I’m hooked!
So this almond cream is what I’m talkin’ all about. Freshly whipped cream pimped up with a bit of almond flavor and beautifully swirled with more raspberries. Completely amazing and ridiculously easy to make.
These days it seems that being busy is a permanent way of life, therefore being able to enjoy some of those much loved treats can seem out of reach. Well, as much as freshly baked croissants are every bit worth the effort, might I suggest finding a local bakery to do the baking for you. All you would need to do is pick them up. In fact, buy a small boat load of the much loved pastry, store them in freezer bags and freeze your stash for those days you really need a bit of an indulgence.

Raspberries with Almond Cream Pastries
Ingredients
- Freshly baked Croissants
- 1 cup Whipping Cream
- 1/4 cup Sugar
- 1/2 tsp Almond Extract
- 1 - 2 Tbls Raspberry preserves of jam
- 1/2 - 1 cup fresh Raspberries
- 1/4 cup slivered Almonds
Instructions
- Fit mixer with cold whisk. In a cold, large metal mixing bowl, add Sugar, Almond extract and cold Whipping Cream and beat until stiff peaks form.
- Gently fold in the Raspberry Preserves until slightly marbled.
- Slice open the fresh Croissants, generously spread the Almond flavored Whipped Cream, top off with fresh Raspberries and a scattering of slivered Almonds.
- Enjoy.
Notes
Flavor substitutions:Replace the Almond extract with Vanilla extract. Replace the Raspberry Preserves and Raspberries with Blueberry or Blackberry preserves and fresh fruit.
