So this is that eggless – safe cookie dough recipe that you do not have to worry about, I repeat … NO EGGS are used in this recipe. Oh Yah (insert “yippee” if so inclined)!

I’m one of those individuals that grew up eating the “oh no-no” cookie dough and have obviously survived. On that note, I also survived riding in the back of pick-up trucks as a kid and sitting in the middle of the front seat of the car during the no seat-belt required days. I also lived without the internet or a cell phone and I managed to survive standing in front of a massive, what could be an oven-sized microwave watching and waiting … 😉

I have to say, that I won’t allow my children to eat raw eggs, not so much because it’s raw eggs, but more of what has become of what could be in those raw eggs. Sadly, in so doing, I have been depriving them of a childhood ritual (don’t worry, it’s a once in a blue moon treat), and so I decided to tweak the eggless cookie dough recipe (because I really wasn’t fond of the taste) that has been running rampant on Pinterest the last few years. That makes me an awesome cool mom now!

A bowl (or martini glass) of this addictive Double Chocolate Cookie Dough also makes for a great night in and goes perfect with your favorite movie … (after the kids are in bed and there are no little ones awake to have to share it with, except maybe for the little Lego people that seem to be hiding between the sofa cushions). 🙂

If you feel you need to dress it up a bit, you can serve it in a pretty parfait glass, dipping the rim lightly in water then dipping the moistened rim into a mixture of 2 tsp. sugar and 1 tsp. cocoa powder, allow to dry and it’s like a mini-dessertini.

My personal favorite way to serve it, is on a rather large spoon!

Double Chocolate Chip Cookie Dough

Serve this Double Chocolate Chip Cookie Dough in a beautiful parfait and dress it up as a mini-dessertini or simply serve it on a spoon! Regardless, it's the epitome of comfort food.

Ingredients
  

  • ½ cup Unsalted Butter 1 stick, softened
  • 2 ¼ cup All - Purpose Flour
  • 2 tsp. Vanilla extract
  • ½ tsp + a pinch of Salt I prefer Himalayan Pink salt
  • ¾ cup Light Brown Sugar
  • ¼ cup White Sugar
  • 4 Tbls Milk add 2 T first to check consistency then add more if needed
  • ¾ cup Dark Chocolate Chips
  • ¼ cup White Chocolate Chips

Instructions
 

  • In a large bowl, cream together the Butter with both Sugars until light and creamy, about 3 - 5 minutes.
  • Add the in the Vanilla, Salt and Flour, continue to mix until well incorporated.
  • The dough will be crumbly, so add in the Milk. Start with 2 Tbls first, blend then if needed add up to 2 additional Tbls of Milk and blend until a stiff but soft dough forms.
  • Fold in the Chocolate Chips until well combined.
  • Keep in the refrigerator until ready to serve (or nibble on every time the fridge door is open) for up to a week.
