Blue Cheese Fondue – Road Trip Series

One of the highlights of my summer was being able to take a wild ride road trip with my kids to north Florida. It was wild! Because I have three amazing and crazy wild kids that were slightly excited to see the beach again.

Let me say that I love every minute of our adventures big or small!

I managed to keep my wits about me though mostly due to the opportunity to drive the new Mitsubishi Outlander, their hybrid beauty. It was a smooth ride, with just enough room and my kids love that they get to individually charge the devices… trust me, this is huge and better than hearing any “it’s my turn” conversations.

While in Ponte Vedra Beach and the surrounding areas, we meandered up and down the coast seeking fun, sun, seashells, and sharks teeth. Most of which we were able to find in abundance, the sharks’ teeth – I only managed to find one, but it is amazing.

There’s so much to do there, and if you plan your stay well enough, you can find the time to scoot up to Amelia Island and Fernandina Beach or down towards St. Augustine. Day trips are easy enough and even Cape Canaveral is definitely within reach.

One of our highlights was enjoying a relaxing meal at Whiskey Jax. The night we went happened to be trivia night and we had a brilliant time participating.

On the menu, you can find some absolutely yummy treats from a salmon caesar salad to rich and addictive fried Oreos, but what I want to share with you is my version of their blue cheese fondue recipe served with kettle chips.

What does blue cheese dip taste like?

Blue Cheese Fondue has that sharp tang, with a punch of bold flavor and a hint of garlic, add in the cream cheese and you’ll enjoy this warm, creamy balanced dipping sauce that you can’t resist.

You can make this appetizer recipe in a small saucepan, then place it in a dip warmer or fondue pot that’s strategically placed by a pile of kettle chips and you’re good to go. It’s ideal for any get together, an ideal party food, or serve it up as a blue cheese dip for wings.

Blue Cheese Fondue Recipe

Yield: 3 cups
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

The perfect appetizer, a blue cheese dipping sauce fondue, ideal for game day parties, movie night, or any get together.

Ingredients

  • 1 - 8-ounce package cream cheese
  • 1/2 cup white wine
  • 1/2 cup milk
  • 2 tablespoons corn starch
  • 6 ounces crumbled blue cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme, optional
  • 1 teaspoon garlic powder

To Serve:

  • Kettle Chips
  • Crispy bacon, crumbled
  • Green Onions, diced

Instructions

  1. In a saucepan over medium-high heat, add the cream cheese and wine, whisking until cream cheese is melted, about 5 - 8 minutes.
  2. Add in the milk, mixing to combine and heated through, about 2 - 3 minutes. Remove from heat.
  3. Toss the corn starch with the crumbled blue cheese, then add to the melted cream cheese mixture. Season to taste with the salt, pepper, thyme (if using), and garlic. Adjust if necessary.
  4. Transfer to a fondue pot, dip warmer or serving dish. Serve with kettle chips, topped with crumbled crispy bacon, and diced spring onions.

Notes

Can be used as a blue cheese dip for wings, cooled then served over salad, or as a topping to grilled chicken.

Can be kept stored in an airtight container in the refrigerator for up to 5 days.
