Hibiscus Strawberry Iced Latte

Try this easy to make, Hibiscus Strawberry Iced Latte. It's my version of the Starbucks favorite, the Pink Drink that's on their (seasonal) menu. It's so, good and has plenty of creamy coconut milk and fresh strawberries. Get the recipe @LittleFiggyFood.
If you are remotely anywhere near a Starbucks, you may have seen their Pink Drink proudly display and tempting you to enjoy…it’s good. But…the price can add up trying to quench your new found favorite drink.

The good news is that you can create your very own version at home. This Hibiscus Strawberry Iced Latte is my rendition and it’s very popular with my littles!

I’m a huge strawberry fan, and right now they are in season around here! Yah! Of course you can make the drink from frozen strawberries too, but if you can throw in a few fresh, it adds an oomph of amazing to your drink.

Most “pink drink” recipes call for a mixed berry and/or green tea base. For my tweaked version, I’ve used my childhood favorite tea, Hibiscus tea and I added a couple of green tea bags to make up a deep red concentrate. All that was left was to blend with coconut milk, and bottom’s up!

This Hibiscus Strawberry Iced Latte is a cool and refreshing and makes a lovely warm weather drink to enjoy.

Another tasty way to serve it, is to mix them up, add in a few sliced strawberries, then pour into an ice pop mold and freeze. The best little frozen treats ever!

Prep Time 10 minutes
Total Time 10 minutes
Servings 6 - 8

Ingredients

  • 4 Hibiscus Tea bags (I used Red Zinger by Celestial Seasonings)
  • 2 Green Tea Bags
  • 2 cups boiled Water
  • ¾ - 1 cup Sugar
  • 8 Strawberries

To Serve:

  • Coconut Milk
  • Sliced Strawberries

Instructions

  • In a tempered glass jug or measuring cup (such as Pyrex), Add the Tea Bags plus the Sugar. Pour the just Boiled Water over the tea bags and stir to help dissolve the sugar. *Hint: when ever you add hot or boiled water to a glass pitcher, jug or measuring cup, it's a good idea to keep a stainless steel spoon in with the hot water. This is to prevent any possible issues with your glass pitcher from cracking due to the heat, as the metal will help absorb the heat.*
  • Let the Tea bags brew for about 5 - 10 minutes for a good concentrate. Discard tea bags.
  • In a blender or with a fork, puree the 8 Strawberries, then mix into the Tea concentrate.
  • To serve, in a glass add some ice, then pour about an ounce of the Tea and Strawberry concentrate into the bottom, top off with Coconut Milk and a few slices of Strawberries.
  • (I use about 1 part Tea Concentrate to 2 parts Coconut Milk. Adjust to taste.).

Enjoy!

    Notes

You can also freeze the Latte in ice pop molds and enjoy frozen!

      1. This is an iced latte, I’ve never tried it warm, but maybe … if you try it, let me know how you enjoy it hot 🙂

    3. This sounds delicious, I can’t wait to try your recipe today. Also thank you for that tip about the metal spoon! Super helpful.

    4. Is the coconut milk here the one that comes in a can with the cream portion rising to the top? Do we just mix it all together?

    5. Hi there, thanks for asking! The tea base of the drink is approximately 2-3 ounces, and then it’s topped up with the coconut milk to taste. I hope you enjoy!
